Ahhh the end of summer is upon us. Keeping it low-key this Labor Day? Or perhaps you’re the one hosting a holiday cookout? Either way, if you’re on the lookout for Labor Day recipes to send summer off with a bang, look no further. I’m sharing a few of my favorite recipes from the summer months.
Grilled Chicken with Shishito Peppers and Herbs
How about trying an Asian twist for your main dish!?
After being a vegetarian for many years, I’ve started to reintroduce a little more meat and a lot more fish into my diet. With my Celiac diagnosis, doctors recommend that I eat more of a Paleo diet.
I recently made this Bon Appetit recipe for Grilled Chicken Wings with Shishito Peppers and Herbs. We adapted it slightly by replacing the chicken wings with chicken breasts just because I like them better. Instead of three pounds of chicken wings, I subbed three breasts, and it worked totally fine.
I also like spicy foods so I added about three extra jalepeños. And to make it gluten free, use tamari or I used coconut aminos because I am trying to cut back on soy products.
Tzatziki Greek Fries
What’s Gaby Cooking is a godsend in our house for weekly dinner ideas. She has an amazing array of recipes from decadent treats (I desperately want to try these Snickerdoodle S’Mores!) to simple salads. I also love that she puts out a weekly meal plan to help get you through the week.
We have been making her Tzatziki Greek Fries on repeat, and this would be a fantastic addition to any barbecue.
Grilled Romaine and Burrata salad
Every cookout needs some greens!
We eat a ton of salads in our house, and it can be really hard to mix things up. In the summer, I’m a big fan of grilled romaine. It’s a hearty enough lettuce to stand up to the heat, and it takes on a really nice flavor on the grill. I recently discovered this Grilled Romaine and Burrata salad recipe from the blog, Fork in the Road, and it was really tasty! Can’t go wrong with burrata.
I subbed basil for the dill in the dressing and left out the carrots. You could really grill whatever you have on hand, and it would be delicious in this recipe.
