So many apples…
After J and my excellent apple picking adventure, I was left with an abundance of apples; and you can really only snack on so many, sneak them into salads, etc.
Luckily, I had mom, dad, brother and his girlfriend shacking up with me for for the Colts-Patriots game, so I decided to whip up a simple slow cooker dessert with the leftovers. Who doesn’t love tender, brown sugar- laden apples with buttery, crispy oats?!
Recipe – Slow Cooker Apple Crisp
2 cups Brown Sugar
1/2 cup Granulated Sugar
7 Apples (whatever you like, I used a variety), peeled and sliced
2 teaspoon Cinnamon
1/4 teaspoon Salt
2/3 cup Rolled Oats
1/4 cup Whole-wheat flour
4 tablespoons Butter
1 teaspoon Vanilla Extract
Step 1
Combine half the brown sugar (1 cup), granulated sugar, apples, salt and half of the cinnamon (1 tsp) in a large bowl. Place into bottom of greased slow cooker.
Step 2
Mix rest of brown sugar (1 cup), cinnamon (1 tsp), rolled oats, flour, butter and vanilla extract until it forms a crumble. Sprinkle on top of apples. Cook on low for 4 hours.
Step 3
Top with vanilla frozen yogurt or whipped cream.
