This watermelon strawberry rosé ice cube cocktail is the only drink you’ll need all summer long! It is light, fruity, refreshing and screams summer.
This cocktail is perfect for patio parties, because it keeps your beverage nice and cold as the ice cube melts.
Strangely enough, today’s rosé ice cube cocktail is inspired by Top Golf.
Last Father’s Day, I took my dad to the sporting venue; being a large chain, I certainly did not expect the cocktails to be good. Usually, they’re too sweet, watered down, hardly any alcohol at all.
But much to my surprise, I had one of the most delicious drinks I’ve ever had. It was a large rosé, fruit-filled ice cube, topped with Prosecco. I got home and immediately scoured the internet to find the recipe, but I couldn’t find it anywhere. That’s why today I’m recreating it for you!
Also, this would be a perfect wedding cocktail; we seriously considered having this be a drink for our wedding. So, brides to be, this one is for you!
While you can make it in any ice cube tray, I think the large cube maker works best, because then the ice cube takes a longer time to melt, keeping your drink nice and chilled for quite some time.
Watermelon Strawberry Rosé Ice Cube Cocktail
Makes: 6 large ice cubes or 12 small ice cubes
What you need:
- 6 strawberries
- 1 cup chopped watermelon
- 1 cup water
- 1/2 tbsp agave or other sweetener
- 1 cup rosé
- bottle of bubbly…prosecco…champagne…any will do!
- Blend watermelon, strawberries, water and agave, making a purée.
- Fill ice tray halfway with purée.
- Top with rosé.
- Freeze overnight or at least six hours.
- Add cube to glass and top with bubbly.
