Party Popcorn

We are huge popcorn aficionado’s in this house.  We make some almost every night; our favorite being with a little Parmesan cheese and truffle salt…yum!

Lately, I’ve been loving testing out some new toppings… white chocolate, sprinkles, nutty brown butter with toasted macadamia nuts, etc.  So I’m sharing a few of those creations just in time for one of the best nights of the year… “The Bachelor” finale!  (I certainly cannot be the only way who feels this way.)

When the finale rolls around, it’s party time.

We’ll be hosting a “low-key” Bach-inspired get-together on Monday night, complete with Bahamas/ Texas/ Portland/ Indiana-themed food and drinks.  Think a little rosé for your rose ceremony, Texas-style queso for JoJo and my favorite Trader Joe’s cookies are making a special appearance for the crazy homegirl Lace.

I have a sick obsession with “The Bachelor.”

Living with the bf, he had no choice but to watch, and so I’ve enticed him with a Bachelor Fantasy League where you get points for everything from engaging in a physical fight with another contestant to displaying a “unique talent for Ben.”  (Ehem, Olivia…)

Here’s some easy treats to get your own Monday night rockin!

 

Confetti Popcorn

 

What you need:

  • 6 cups of air-popped popcorn
  • 1 12-oz bag of white chocolate chips, melted
  • sprinkles

Make it!

  • Pop the popcorn.  Spread on a cookie sheet.
  • Melt the white chocolate in the microwave, checking/ stirring every 15 seconds until melted.
  • Pour over popcorn.
  • Throw on the sprinkles!

 

Brown Butter Macadamia Nut Popcorn

 

What you need:

  • 6 cups of air-popped popcorn
  • 1/4 cup butter
  • 1/4 cup brown sugar
  • handful of macadamia nuts

Make it!

  • Pop the popcorn.  Spread on a cookie sheet.
  • Preheat oven to 400 degrees.  Toast macadamia nuts until golden brown, about four minutes.
  • Melt the butter in a small saucepan over medium heat.  When the butter starts to foam and gives off a nutty aroma, it’s ready.  Remove from heat.
  • Stir in brown sugar until it dissolves.
  • Drizzle on popcorn.  Toss on macadamia nuts and top with sea salt.
