During quarantine, I’ve gotten more into making everything I can from scratch. I appreciate knowing exactly what’s going into my food and my body, something I have to pay extra attention with my Celiac Disease. One of the easiest things I’ve started making consistently homemade is granola, so today I’m sharing my gluten free granola recipe.
Granola, greek yogurt and berries is my go-to breakfast. But traditional granola can be loaded with sugar. Using natural sweeteners like honey and maple syrup make for a healthier swap.
I love that granola is the perfect DIY. You can throw basically anything you want into a bowl, and it’ll turn out delicious. If you have kids, this would be a great indoor activity to have them put their own mixture together.
Let’s get into it…
Gluten free oats work as the base.
Then, you add a sweetener of your choice. Organic maple syrup and honey are the healthiest options.
Oil gives the granola its crisp and crunch.
Then, the fun part, all the add-ins: nuts of any kind, pumpkin seeds, flaxseed, dried fruit, chocolate chips, peanut butter, coconut flakes, citrus zest, etc.
I’ve been working off of Cookies and Kate’s granola recipe to create my own ideal combination.
My favorite combinations:
-Maple Syrup + Pecans
-Honey + Almonds
-Honey + Macadamia Nuts + Vanilla Extract
-Peanut Butter + Pecans + Honey
-Pumpkin Pie Spice + Pecans + Chocolate Chips
Gluten Free Granola Recipe
what you need:
4 cups of old-fashioned gluten free oats (I use these)
1 cup of nuts and/or seeds
1/2 tsp cinnamon
1 tsp vanilla extract
3/4 tsp salt
1/2 cup of avocado oil (you can use olive oil, but you’ll def. notice the taste)
1/2 cup of sweetener like maple syrup or honey
optional: 2/3 cups of any other add-ins you want like dried fruit, chocolate or white chocolate chips
how to make:
Pre-heat oven to 350 degrees and line a rimmed baking sheet with parchment paper.
In a large mixing bowl, combine oats, add-ins, cinnamon, salt and vanilla extract.
Add oil and sweetener. Stir and make sure every oat is coated.
Pour onto baking sheet. Try to keep granola in an even layer.
Bake until lightly browned, about 10 minutes. Stir. Put back into the oven for another 10 minutes.
When you remove the granola from the oven, this is the time to add chocolate chips.
Let cool, and enjoy!
